I was making a cake for my mother’s birthday, and she LOVES this strawberry filling so I came up with two variations. Needless to say, your cake will be AWESOME no matter which version you use. You can also use this strawberry filling for cake to level up a white cakes or box mix cakes. Your homemade strawberry cake filling should last for up to 1 week stored in an airtight container in the fridge.

Today I am showing how to make strawberry filling for cake without cornstarch. I love the chunks of real strawberry in this sauce. However, for a smooth strawberry cake filling, puree your strawberries in a blender or food processor before you start.

Next, BEFORE applying your berry filling, use some of the frosting to build a “dam” around the edge of cake. This keeps your filling in place so it doesn’t squeeze out when you put on the next layer. This rim of frosting forms a dam and keeps the berry filling where it should be. It also makes it easier to frost the outside of your cake without getting berry filling in your outer frosting. You can also fill cupcakes with this strawberry sauce. Cut a small hole in the top of your cupcake, roughly ½ the cupcake’s depth, and remove the piece of cake.
On my blog, you will find easy and delicious recipes for the everyday home cook, with easy-to-follow instructions and step-by-step photos. The recipe’s author compares it to the filling in Costco cakes, which is a pretty accurate description. It’s sweet, but the cream cheese cuts through that with a hint of tang. Somewhere between custard and frosting, its silky, pudding-like consistency and mild vanilla flavor work well in no-bake desserts. Chocolate mousse filling is light, airy, and as smooth as silk. So if you want to make it chocolate or strawberry, you can.

This four-ingredient buttercream tastes like the Baileys one above. Bavarian cream isn’t the simplest filling to make. However, it is one of the most rewarding, so it’s time well spent. Additionally, you can make it with fresh pineapple or canned pineapple. That makes it easy to find ingredients, even if you don’t live in a pineapple-heavy area. I love whipped frosting, but I’m in the minority in my family.

It works well on biscuits and toast and tastes great in cupcakes and cakes. It has an exciting, sweetly tart flavor that’s hard to describe. Although this is a fairly thick strawberry filling, I still like to pipe a quick dam, using the frosting that the cake is frosted with piped from a piping bag. Mash strawberries in a bowl or use a blender/food processor to make about one cup of juice and pulp. Place in a small saucepan with jam and stir together.
Literally everyone else goes for the buttercream. I enjoy it most in scones, but it works well in cakes and cupcakes, too. Of course, lemon curd is probably the one you’ve tried before. It’s zippy, bright, and adds a big kick of lip-smacking goodness to your food. If using fresh strawberries wash, cut stems, hull cores, cube, or mash down with a potato hand masher tool or something similar before/during cooking.

If you want just a thin layer of filling this recipe could fill in between 3-4 cake layers-but again it will be thin. In a small saucepan, combine the first 4 ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. If you'd like, you can press some of the strawberries against the side of the pan as they soften. Pour the strawberry filling into a heat proof bowl and allow to cool. Then, place one cake layer on the serving plate.
HI Bimadi, We have not tried using it on chocolate mousse filling so I am not sure if it is too wet for the mousse. On medium/high heat allow mixture to come to a boil. Transfer sauce to a small bowl or jar and refrigerate, covered, until ready to use.

It has plenty of chocolate flavor but isn’t super sweet like true buttercream. All this talk of whipped frosting has me craving some, so I dug out this whipped chocolate buttercream recipe. It’s a sweet, slightly tangy option, as most cream cheese-based fillings are.
Lemon curd is just as delicious as the recipe above, only brighter, zingier, and way zestier. I like to strain mine to make sure no little bits of egg are caught up in the mix. The only challenging part will be getting it onto the cake – you’ll be very tempted to eat it all straight from the bowl. Mix it with heavy whipping cream, powdered sugar, and vanilla bean paste for something truly decadent. Turn off the heat and let it sit while it continues to thicken more.
Strawberries in particular are such a versatile fruit and they complement so many desserts. Fruit filling also divides the cake and frosting helping to even out taste and texture. When filling a cake with this strawberry filling, put a layer of buttercream down on the cake and then pipe a dam around the edge to hold the filling in.
